The taproom's flagship Dellwood IPA delivers a classic, balanced profile, while the best-selling 1853 Vanilla Cream – a lactose-sweetened ale with prominent vanilla character – evolved over multiple batches in direct response to customer feedback. A seasonal blueberry wheat ale called Lake Life rounds out the most anticipated annual releases.

"Great beer is made in the cellar – it's your practices there. Documenting everything and being diligent on the details is what separates beer," Lindahl said.

Beyond its taps, Nik and Ivy Brewing actively partners with local schools and sports boosters through regular fundraising nights. The brewery also accommodates private events – including bridal showers and wedding receptions – and serves locally sourced Candlelight Pizza.
